Culinary Challenge 3 - Dessert

This week's objective:
Use sous vide to make a new dessert or your favorite dessert in a new way. Some things to try are new takes on custards, confit fruits, converting starches to sugars(bananas are killer) and so on. Try out modern techniques you have been waiting to unleash such as encapsulations, foams, and hot set creams.
How to play:
Take the challenge in your own kitchen, then share your results in this forum thread. Describe the dish you have chosen and techniques used to make it. Describe where your idea or inspiration came from and what your plan of attack was, and finally, post your pictures.
The top 3 posts will get their photos posted on ChefSteps' Pinterest board. Have your entries posted by Sunday 2/3.

it is simple, use a lot of gelatin, don't shake, halve all recipes on n20, make sure you freeze the containers and don't clean any of the outlets

- That was super funny to me. I just got back from explaining exactly that to some students. Every time they would give me a siphon to use, I would ask if it was cleaned, I knew it wasn't. I would open it up, pull out the valve and sure enough, covered in mold and rotten cream. Cracks me up to hear all the worst things listed out like that. Ben was also complaining about his sore arms from shaking isi's all weekend!

Here is a quick sous vide ice cream that is amazing with nitro-shattered Turkish delights. Our take on a Spumoni.
Ice cream:
400g milk
110g sugar
200g pistachio paste
80g yolks
5g salt
Blend all and cook 75C 60 minutes
