I'm trying to develop a sweet corn cake recipe for a dessert menu I'm working on. I'm having mixed results in my research. Anyone have a solid corn cake recipe they would be willing to share? I'm talking about a baked cake, not a corn pancake type of thing.
Also, does anyone know of a ratio/conversion of cornmeal/masa harina to flour? Like, if I were to replace some of the flour in a recipe with masa, what would the ratio be? Any ideas where to start?
