Has anyone got a tried and tested Sourdough bread recipe :-)

I use Forkish pain the campagne.
400g flour (380 ap and 20 whole wheat)
310g water (tempered)
180g levain (Active)
10g Salt
2g Active Dry Yeast
If wanted 10g sugar, whatever else you like in there.
I use that for boule, pain and baguette, just change temp and
perhaps what you put on the surface.

I like Chad Robertson's Tartine method, I think you can find it on NYTimes.

Yes.. I agree with Nico. Go out and get the book or google Tartine sourdough. It is super easy and requires only water, flour and time. I have had my same starter going for about 4 years now. The poor thing is often neglected. But, after a few feedings, its good to go!

I would second that - Chad Robertson's Tartime Bread will give you the bread closest to the real thing!

I think Flour Water Salt Yeast is probably better than Tartine for someone relatively inexperienced with bread making.
I would read both though.

I just baked my first loaf of the basic country bread from Tartine. very easy to follow as Chad does a great job with instructions/photos. I definitely recomend.

We just returned from our summer holiday in San Sebastián in northern Spain and whilst we where there I ran into a guy from a local bread shop called The Loaf and i spent an hour with him discussing bread and was invited to watch the bakers in action.
These guys are incredable and are not in it for the money?
They just want to make good bread.( no pun intended )

Are you interested in the bread recipe or in how to make your own starter? I've got some procedures from Richard Bertinet's
Crust
that I can pass along. It's actually a fairly simple recipe (and doesn't use any weird ingredients), it just takes a fairly long time (and some warmish temperatures). I used it as part of a class, so I've got a few data points just by having seen my students try it out. Not sure if it counts as "tried and trusted," though :P

Hmmm... Every sourdough recipe/formula is very close to the same.
600g of Bread flour
400/420g water
10/12g of salt
That basic recipe recipe has not changed for 2000 years.
How you mix it, proof it, shape it, score it and bake it... Is the key to making a good loaf of bread.
