Storing Pork belly
aleks_sternfeld_dunn_21724
After cooking pork belly sous vide once I make portions do you reseal the portions with any kind of liquid? I know with traditional pork belly cooking it's often stored with the braising liquid. Thanks for your help!

I wouldn't because you will typically be searing the belly come eating time so the less work the better. I usually scrape it and dry it as best I can after it has been chilled after cooking and then portion, seal and press flat in either the freezer or fridge so it will get a nice flat surface to sear when it comes time to dig in.

That is what we do. Chill, scrape, portion, repack.
