Hi chefs,
I discovered a breakthrough egg cooking method recently when I had to make Creme Anglaise in a hurry:
- I used the steamer wand of the espresso machine!
I placed my yolks, cream, sugar & vanilla in a metal container and turned on the steamer wand, submerged.
It cooked the raw mixture gently and it thickened into perfect sauce in about one minute.
I have also made amazing steam wand-scrambled eggs with it and am going to experiment with Lemon Curd next.
