Buttermilk Fluid Gel - Two sequestrants

Hi,

From the fluid gels class, the buttermilk gel needs both Sodium Citrate and Sodium Hexametaphosphate.

Is there a way around this? I have sodium citrate, and I can easily get sodium hexablexalongname, but I'd rather not if I can just use the citrate. Is there somewhere that explains the differences between the two, and how they work together?

You can just use SC but the gel won't be as smooth and durable.
