Cornish Game Hen Stuffed with Chorizo

Boned a game hen, stuffed it with Mexican Chorizo and blasted it in a 425°F oven for 40 minutes. Cut in half and seared the inside in a hot pan. Served with bacon fat sauteed spuds and corn.

I've boned both turkeys and chicken to stuff them with different things, but never a Cornish hen. What a great idea! Looks like an excellent dish.
