I cook with Albacore on a regular basis.
When I was following the recipe I noticed that it asked to slice the loin in pieces of 200 grams each. Are you sure they were 200g each? After I sliced mine, and weighted the slices, they were much smaller than 200 g (60g) yet looked similar to the ones you were making. My gut feeling is that pieces that you sliced were closer to 100 g (judging from the size of the the loin you were cutting). Had I cut the loin into 200g pieces, I would have ended with pieces of loin almost 7cm thick (so almost as long as thick).
Has anybody tried the recipe?
I also wonder, do we really need that much brine? It sounds like a huge amount of water for so few pieces of tuna. Is there any particular reason for the ratio brine/tuna?
