requesting center cut salmon

Guess what? God does not make square or rectangular fish. That said, why ask for a center cut piece of fish. Myths: it looks pretty on the plate; it is easier to cook because of its uniform shape; it is thicker so it stays moist; how many more of these myths are there?
Salmon, any size, shape or thickness is pretty - it is bright orange, red or pink!
Uniform shape, a salmon fillet is flexible, you can bend it and fold the thin belly section or the thin tail section under the thicker portion to create a more uniform cooking "cube". Or, if bake, sauté, grill, or broil, and you have more than one piece, just cover the thinner sections with each other to the point that it is more uniform. Watch the temp, from each side and remove from heat at 145 degrees F.
Thicker stays more moist because it is more forgiving if over cooked. Just don't over cook the thinner pieces....again, check the temp.
The tail is leaner, and has less bones, consider a tail piece, it cooks faster, and is less work regarding the bones.
