COFFEE!

Hey all! At ChefSteps we drink good coffee. They are called Herkimer Coffee here in Seattle. These guys really care about actually their product. I have had so many coffees from around the world and these guys source, roast and serve some of the best in the world.

I've been getting Tonx(acquired by Blue Bottle) for a year and they've been delightful so far. Just adding an additional option for context, but I agree Herkimer is really good.

I'm definitely a fan of Blue Bottle in the Bay Area since I live here, but I also like Lavazza as well for the Moka. Will have to check the Herkimer!

herkimer owns. best roast in seattle hands down. their el salvador is pretty unreal.

Recently had some Four Barrel and it was eye opening. Had enjoyed some of the big names like Blue Bottle, Stumptown, Philz, Chromatic, etc but the Four Barrel really stood out.

My primary roaster is Auggie's in Souther Cali, but I sometimes also dabble with Blue Bottle, Intelegencia, Cartel, and Cafe Vita. Thnx for the tip, good to know Herkimer now ships!.

More importantly, HOW do you drink your coffee? I no longer drink espresso, I have moved over almost exclusively to Chemex and/or Clever pour overs, with the occasional syphon or cold brew instead. I'm extremely precise with my methods, weighing and measuring every step, dialing just the right grind size too.

I find this interesting because my coffee roaster does not carry a bean type for more than a month or two before it sells out, they typically use single origin beans that are from small batch farmers. I thought the product is time limited because there is not that much product to be had, I assumed this is because the beans will only last a short time before they are no longer in their prime. Also they have more than one type of bean from each region, so for example I could never say "I like the Ethiopian" for example because each bean and roast is radically different.

Is my assumption wrong about the limited time frame where ripe green coffee beans can be stored?

As I understand it, green coffee beans can be stored for some time. Once roasted the shelf life will be more limited. I typically buy 3-4 months worth of green beans, but only roast 3-4 days worth at a time.
