Hey all! Just wondering if the corn in the sweet corn ganache is able to be substituted for pumkin. Just thinking ahead for some halloween and thanksgiving ideas.

Absolutely. You'll need a bit of trial and error, but pressure-roasted pumpkin ganache would be delicious. Try pressure cooking butternut squash or pumpkin with 0.5% of their weight in baking soda in a pressure cooker, with just a bit of water added to cover the bottom of the pot. Cook for 1 hour to 90 minutes. Then puree and add sugar and butter to get the texture and taste you want.

I just found out about your Sweet Corn Ganache posting a couple of days ago. I tried looking for it again today and I don't seem to be able to find it in the search no more. Is there a way to see it again?
