So i had some Friends over for Dinner yesterday and thaught i'd share some pictures.
As an amuse we had a bett sphere on wasabi creme fraiche.
The spheres didn't come out quite the way i hoped, you can see theres some air at the top, tasted good though.
Next we had Watermelon vacuum compressed with tarragon, then served with Feta:
This was pretty awesome, would've been a bit better if the weather wasn't already in full autumn-mode here, but whatcha gonna do?
As a Fish-course we had SV-Cod on compressed cucumbers with crispy chorizo strips. I also made a quick Dashi Air and garnished with some dried crumbled Olives, i found in the fridge.
The main was rather traditional in style: SV Tri-tip, roast potatoes, cherry tomatoes and herbed Butter. Everything but the butter was made sous vide.
And lastly as a dessert sv-grapes with fresh goats cheese and parsley.
The tri-tip was definitely the winner of the day, but all the courses were pretty well received.
