I'm working on a project for St Patricks day, a special which I could serve at the cafe I work. Something a little funky and different. Essentially, my aim is to create a real life dish of green eggs and ham. I spent most of today working on the bread, and I've got that down, worked out almost perfectly, but now I'm stuck on the eggs.
Here's what I've thought out so far:
I separate the yolk from the white and keep both parts. I break up the yolk, give it a quick whisk and then add food colouring to it till I get the colour I want. Then I add Algin to that before submersing in a gluco type bath. This should sphere the yolk.
At that point I add it back to the egg whites, get them to surround the egg yolk and then I either poach or fry the egg, depending on what the customer wants.
I would try this out on my own, but I currently don't have the time to do this sort of stuff at home.
Have any of you tried this out or attempted something similar? I'd love to know if it really is this straightforward.
