I wonder if you buried the eggs in coffee beans for a week or so in an airtight container if you could get them to infuse through the shells.

you could "season" the eggs with a very finely ground espresso powder. Or you could steep some cream/milk with coffee grounds and then strain and make the eggs with that folded through. You'd obviously have to cook the eggs differently than Brian did though because that Patterson method won't work too well with cream I don't think.

How'd you like that method? I found the texture to be a bit lacking but at the same time the lightness is desirable.

A completely different end result, but what about a Cha Ye Dan preparation with coffee rather than tea?

This was my first time with that method. It is extremely easy and provides a decent result. I felt the end product was a tad overcooked, but I could probably improve that with additional trials. The eggs also held on to a lot of water. I didn't want to compress too much to squeeze it out, and so I felt like they still retained more water on the plate than I'd have liked. This won't replace my favorite scrambled method of sous vide and whipping siphon, but it's much faster. I'll probably play around with it some more at some point.
