Same, I work with a roasting company who's obviously extremely invested in the subject. Still learning a great deal myself, but the knowledge is easily available when the question is known.

Well, Im hoping it addresses some common coffee theory, not just, well this is espresso. As well as steaming milk, things to look for in perfectly steamed milk, and then different types of preparations, like french press, espresso, turkish, cold brew and the pros and cons of each. Then also things like how to store coffee what happens if you say freeze it before grinding it (as I understand the friction of the blades can cause undesirable flavour). Coffee profiles, I've noticed since I've moved to london a flat white is what I apparently have to order if I want what I consider and used to order (in Canada) as a wet cappuccino. I suppose lastly (only because I have no idea how this is a thing for people) but how is coffee decaffeinated.
Also I would love to see maybe eventually something on tea, I have some pretty good understandings of it, but I think it's underrated. I've always wanted to cook with tea as it adds a lot of amazing aromatics, to the point I've steeped tea bags in lets say a pumpkin soup, and it was great, but more ideas would be fantastic.

The class is amazing. Even being in London at the moment it seems everyone and their dog has an espresso machine but no one knows how to use it (save for a few places like at Borough Market). Very Very well done as always, I am still interested to know about things like the nuances of french press as well as Turkish coffee. Each one brings so much to the table with varied levels of equipment needed as well as complexity for something as seemingly simple as a cured and roasted bean.
