If I recall (and unfortunately, it's only in volume), about 1/2 teaspoon of ground vanilla bean to one vanilla bean. The ground vanilla bean is quite convenient and I generally have some on hand, but in retrospect, I typically estimate if I'm not using rigid recipes (e.g. when making a sauce for pancakes or if I want extra vanilla in the ice cream).

Ground Vanilla comes in many qualities, in some it's dried pods/seeds and for some it's only the dried pods AFTER extracting the aroma!; all is legal but the taste cannot be compared.
