Looking good! Any guidelines on the SV black cod? I've been wanting to do miso glazed Sable for a while, but haven't gotten around to it. Nobu's recipe calls for intense heat, and it ends up with beautiful browning and crust. How did you adapt that sort of recipe for sous vide? Is there an intense sear step?
