Quince anyone?

Sad that this extraordinary ingredients is going out of fashion - it's wrong...
So, WHO have a brilliant idea ot a quince jelly on ice or other suggestions?

Daniel Humm makes a Quince consommé by
- Peeled and thinly slice quince about "6 cups".
- Combine with 1c pomegranate juice and 1/4c sugar in a large bowl, cover with plastic wrap.
- Cook over a double boiler for a couple hours and strain through a fine-mesh chinois.
For a gelée
-Bloom 3 sheets of gelatin (I'm guessing its 140?)
-Reduce 2c of consommé by about 2/3.
-While the consommé is still warm dissolve the gelatin into it.
-Cast gelée and chill until set.
May be fun to make the consommé and using the iso class on the site turn it into a foam and serve over a cocktail. Cook it down and use it in place of banana or zucchini in a bread recipe?
