Oh man, this was so good! You guys are really getting these dishes dialed in. I've sure never seen a bright green palak paneer before. Tell 'em about the breakfast egg amuse too!

Palak paneer is a great dish and one of my favorites.
The best Indian dish is a chai from the chai wallah on a street corner. You can't go wrong with a hot vindaloo after many ales. A goat rogan josh will never be turned down. If a tandoor is around, chicken tandoori is a must. Any of the "vege" options that are cooked infront of you at a street stall in India are amazing, life changing, and very cheap.

My favorite dish of what (admittedly little) I know of Indian food. Might actually be the only eggplant dish that I like, period, now that I think of it.

My all time favorite is Pani Poori, otherwise known as Golgoppa. Little crispy ufo-shaped pooris, hollow inside. You crack a little hole in the top, fill them with a mixture of potatoes and chickpeas and onions and mint chutney and tamarind chutney and yogurt etc., then dunk them in a spicy/herby/cold water sauce, then you have to eat it in one bite before the sauce leaks all over you. Classic snack (chaat) all over India and such an amazing riot of flavors and refreshing. (Here's a decent reference but really you just need to find a South Indian restaurant or chaat parlor and try it.:
