Baking is really fun, took me a while to comprehend dough (still probably don't) and the Forkish book was a huge help, sourdough is amazing fun.

i did these with an overnight starter which produced decent flavor, i think i'll probably go a bit longer next time but the rest of the process was a lot easier than i expected for how high the hydration was in this dough.

The only thing I would change next time is to let the starter biga ferment longer (probably at least 24 hours) to get a bit more complexity.
