Inspire by Alinea (I like the root beer cure and sauce). A cigar for dinner..............Slow roasted salsify (If I had a restaurant, this would be on my menu!) with fennel butter ashes, beef short ribs with root beer sauce and braised prunes. To drink, the same with caramelized fennel foam (fennel foam is a big hit!). For desert, toasted pumpkin gelato (texture needs some work-slow roasted in salt bed and strained multiple times to get out as much water as I could) with granola, pumpkin seeds, ginger chocolate, orange rind and maple syrup.
