Brown Hare filet SV, quickly seared (15 sec/side) of extraordinaire tenderness and taste. Potato cube, cooked in vegetable broth/ pan seared with Carrot and powdered black trumpet. The sauce; complex build of butter roasted spice and herbs, stock vegetables, 50g shiitake, 1 5ml red wine, strained and extremely reduced. The combination sauce - brown hare was simply outstanding.
