Its whatever vegetables I could find at the market. Blanched or steamed, then finished in a butter infused with jamon to warm through. This is the original Gargouillou technique
It has some pumpkin puree at the bottom and a purple cabbage vinaigrette around the sides and drizzled over the vegetables as well. Finished with edible flowers and jamon
