Did a pumpkin pie foam where the texture was good, but I used toasted pumpkin seed oil so wasn't as "pie" ish as desired. This is a one bite smoldering cinnamon apple pie. A twist on the apple cider gel from alinea. Quite straight forward, light and quite flavorful. Take apples, apple cider, pumpkin pie spice, brown sugar and agar and make a gel. A tempura batter with gluten free flower (I find this type nice for the crisp and light crust) and carbonated water. This was good ROI.
