I have made this, Eric Ripert version, and yours has such a better plating than mine did.
Excellent job. I also like the extra Uni on top.

I've tried making the Bernardin version. I find that with the amount of butter used in the recipe, the flavor of the uni does get lost quite a bit. I wanted something a bit more pure so I made some dashi and reduced it down slightly, then I passed the uni through a fine sieve into the dashi, whisked it in. And while the sauce was still warm a swirled in a small amount of butter. Much cleaner this way imo and it doesn't need the lemon juice that the original calls for because it's not as rich
