Yes...I'm starting to freak out. I can't think of anything I'm missing and feel like a have a solid plan, but 2 dishes at 250 covers each is a bit outside my comfort zone.

Insanity. How many whipping siphons will it take?

Well, I had 2. So 2 I guess. I vacuum bagged the egg white foam and kept it in the circulator, then refilled siphons as necessary. I vastly preferred one of the siphons (the isi) so the other served only as backup. I probably could've managed with just the one if necessary.

Here I am just about ready for service. Circulator was going with additional egg yolk and fried egg white pre-foam. Smaller bath with squeeze bottles of egg yolk and smoked maple syrup. 2 siphons. Brioche cubes, salt and sweet spice at the ready. Unreal quail eggs on the right. No major problems.
