Didn't have any pork cheeks at hand. Also i didn't sieve the purree since i was hungry. Still delicious. Pictures not the best, sorry.

Yeah, it's a great dish. I think that might be the only purée that chefsteps has where they don't mention to sieve it in the recipe.

True, they do however list a sieve in the equipment list, which doesn't show up anywhere in the recipe, so maybe that step's just missing. Without sieving mine came out a bit grainy, but might just be due to my blender. Guess I'll have to invest in a vitamix one of these days...

Yeah, it is pretty smooth in a high powered blender. I use the oster versa, which has most of the performance of the more expensive ones for a lot less. I can't wait to get sieves though.
