Gotta tell you, I could've lived with that. How'd you pickle your apples and how thick were the slices, because mine were way more translucent. Also i'll have to do loin soon, i suspect it might have more taste than tenderloin.

Just followed the
CS recipe
. The only difference was that I cut the apple into 8ths before running them over the mandoline and sliced on a slight bias.
