I'm not sure how many of you are familiar with this candy but I had it for the first time a couple years ago in South Korea. I was in Seoul on a popular shopping street and saw a guy making it to order (taking about 5 minutes) and I was mesmerized. Basically consisting of pulled sugar but when finished it totals up to around 17,000 strands. Sure, you can just buy cotton candy but this has a different eating experience. These strands are most commonly wrapped around a nut paste, giving a pleasant sweet salty flavor. My favorite way to eat these are out of the fridge, because the sugars firm up accentuating the chewy texture. You can find this treat all over Asia and the origin is said to be China.....like everything else. Long story short I saw Dave Arnold's video on making these on youtube last week and thought I had to give it a try. With some practice I started to get the hang of it very quick. I'm excited to experiment with different filling and wanted to ask you all if you feel you could benefit from ChefSteps making our own video on this?
