Planted these this summer and its time to harvest them ( i should have several tubers).
Wondering if anyone had an idea as to what i should do with them, that doesn't involve the obvious chips or soup?

Thanks for the info, it was really helpful. They actually stopped growing at around 5 feet. I take your advice and keep them in the bed for next season. The pickling thing sounds very cool!

Hard to tell from the picture, but normally the plants will get to be 5-6' tall and the tubers are between golf and tennis ball sized. If they are smaller than that, I leave them in the garden over winter to seed next year's crop.
I have prepared mine by boiling them until tender and ricing them like a would a potato. They will be a little watery so try to cook that off, but you will end up with a very nutty flavored mash potato. When we ended up with several rogue plants that I didn't want reproducing, I took all the smaller tubers and as suggest below pickled them whole (after a good scrubbing with a potato brush). They look pretty cool in a Bloody Mary.

Shred them and make the CS rosti. You could blanch and then pickle them. They're a fart producing machine though so make sure you cook em' good.

Blanch then glaze them with butter. They're also used as a hash, caramelize them and finish with salmon bacon , sour cream, and dill.

I've never cooked with them but wonder..if they're good as chips and soups, that would mean they may be a good candidate for any sort of shell that could be stuffed. My head naturally goes to savory, or perhaps a nut puree' for the filling. But if they work as a shell, the sky is the limit as to the filling.

They are also good par-boiled, grilled and added to a salad.
