Had a big conferance today for lunch, and I had some leftover from my starter last night so I did a smal creation for their lunch.
It´s salmon that is first sprinkled whit sugar and salt, then rolled in plastic foil and put in the freezer. After that its charred directly on the stow and rolled in charred-leek and toasted sesami seeds. Its served on grilled asparagus marinated in chili and garlic, pickled red onion, ligtly smoked mayionaise, and a lime-foam on top whit some micro greens.
