Playing with more Mugaritz recipes and ingredients. I made chicken stock the other day and a comment I received was "too bad you can't just serve that".........well, add a little kuzu, dehydrate, really quick fry and voila. Crispy chicken stock.

Next up, my Calcium Oxide arrived and pumpkins are dirt cheap. Pealed, cubed, added to the mixture of calcium oxide and water for 3 hours, simmer in syrup for 2 and the outer coating develops this almost transparent crisp delicate (thick triple cooked chip) skin with this wonderfully sweet pumpkin puree inside.
