decided to have a two pizza dinner with two salads and a dessert.
1. margheritta pizza with basil, fresh mozarella, and vacuum compressed and red wine vinegar infused tomatoes with a raddichio-romaine and prosciutto salad with hazelnut oil vinaigrette, vaccum compressed apple cubes (infused with apple cider) and topped with roasted hazelnuts. both were very good. the pizza crust was thin, crispy on the bottom and sides, and chewy on top.

the pizza had thin slices of jalapeno and also garlic confit. both of these flavors did not come through like i would have liked (not strong enough).
2. indian nan pizza with mint chutney topping and a carrot strands salad with yogurt dressing (with cumin, coriander, cardamon, ginger, lemon juice, cayenne) topped with cilantro and roasted peanuts.
this pizza did not come out the way i wanted to. i got distracted and it baked longer than i wanted it to. the crust was cracker like but it was enjoyable nevertheless. the dry cracker texture of the pizza went really well with the soft, moist texture of the salad.
3. orange panna cotta sprinkled with cardamon sugar and orange zest over a coconut cream-coconut rum puree. nice flavor combination.

there was a thin layer of gelatin at the top of the panna cotta probably because i did not disperse the gelatin well enough.
what i like about cooking is that you can always try to do better next time.
