I had actually considered that. The limitation (mentally) was he amount of soft tissue/collagen comparitivelky. Geese typically have more and thus have the potential to change (in this case curl up) with greater strength. Lastly, they have a GREAT deal more fat and essentially I would be trying to deep fry and render it simultaneously. Perhaps I could have tried both by clipping the skin to the cooling rack and placing a tray on top, but I'm not sure if that would have made a difference (at the same time I can't say it wouldn't have). Thanks for the thought provocation! :-) Makes me wonder for next time.

One other idea for you from J. Kenji López-Alt at The Food Lab: Place the skin between two half sheet pans with parchment paper separating the skin from the pans on top and bottom:
