It was a goose evening. In everything but the cranberries....Goose skin, corn and truffle Thyme ball (similar to alinea chicken skin), Goose stock chips with green bean dip (also made with with goose stock), earthy salad-fossilised beet, roasted walnut infused tomato center, prune and balsamic gel with walnuts, Chestnut and truffle potato veloute (with cherry smoked goose confit - hit of the evening), Goose breast with crispy goose skin, vanilla sweet potato puree, sweet potato and turnip confit, orange and goose stuffing, orange sauce, Foie gras and brioche stuffing crumble with nutmeg sauce, carbonated cranberries, edible Xmas ornaments (pumpkin pie, caramel apple pie, red wine poached pears and coffee and pumpkin cheesecake). Bulbs of apple and pumpkin lit up which was pretty cool.
