So, I've worked with Ultratex a lot, but for some reason when I've gone back to some recipes I've been having issues. I'm adding 6-8% of the total weight of product to get a "pudding". It's not been working and my recipes have been tried and true. It's just getting gummy and snotty. Could it be the brand?

It can totally be the brand. There are also several variation on Ultratex IIRC, is it possible you're using a somewhat different version?
