Strawberries and Cream

Does the juice portion of this recipe need to be centrifuged? Could I use 'off the shelf' juice instead? Id like to make the Strawberries and Cream Cryosicle, but I don't have access to a centrifuge.

Also, is there a certain tip for the Siphon you recomend or is the one that comes out of the box with the iSi Siphon acceptable?

One way is to simply slice the berries, sprinkle some of the sugar used in the recipe onto the berries, and let the juices drip away from the berries into a sieve. This is how David Kinch makes clarified strawberry juice for his strawberry gazpacho. It works great.

Another way is to blend the berries and add a small amount of Pectinx to the puree and wait for the pulp to separate from the juice and then strain the juice.
