Depends on what you will use it for. If you want to make powders from oils (or other high-fat products), you are best off with tapioca. If you want to use it for thickening, other starches can be used too.

You cannot use any tapioca maltodextrin to make powders from oils. Unfortunately you'll need the N-Zorbit M.

It works fine. Tried it several times and had no problems with it. N-zorbit M is just a specialised brand in this product.

Can I use tapioca starch/flour instead of maltodextrin?

tapioca flour has a lot constituents of which maltodextrine is one. Theoretically it should work, but of the effects of other ingredients will alter the final product
