I usually hold mine for up to a week. I personally haven't frozen créme brûlée because they are always gobbled up right away, but I think it would work fine.

Its the trawing id be concerned with .. They hold just fine for 5 days

If you freeze them, when they thaw you will probable get some liquid oozing out of the custard and the texture will suffer. The really good news is that if you cooked them sous vide in the jars, and don't break the seal of the lid, you can actually keep them refrigerated for many weeks, so long as your fridge is cold. Essentially, you've heavily pasteurized them and they should be fine a month or more if you store them around 3 °C / 37 °F.
