Hey Roberto, sorry haven't looked at this in a while. In short, I am not 100% sure, but here are some things to play with. Thicker is somewhat relative, too much potato and you cant get this through the siphon. I've had great luck with Xanthum and Agar. Also you can play with less broth and more cream - it is the fat that traps the bubbles.
