Fried cornish hen with amaranth cooked in Duck stock and mushrooms, with asparagus and hazelnut crumbs. Had some help today. Had a big laugh when I saw how the hen sat in the oil (hence the day at the spa title). The skin was so crisp ad the meal wonderful. Of course had a day of being proud when my son turned to me a said, I don't need your help dad, I can peel the asparagus (at 6 years old, I was more than pleased).
