Cryoshattering cheese

Hey!
I was fortunate enough to get my hands on 1 liter of liquid nitrogen, and want to cryoshatter some cheese for service tomorrow. Any input om what type of cheese, how much 1 liter can freeze or any other tips?

the smaller the pieces the more you can freeze (think surface area). I would estimate that about 50% cheese to (remaining) LN would be your maximum (likely less). Depending on the vessel you will be doing this in, it is helpful to freeze the vessel in the freezer first. You will lose some LN while it cools down he vessel (am assuming you would pour it in a stainless bowl or similar). You could do almost any type of cheese.....like goats cheese and while you're at it, throw in a roasted beet that's chopped.......then serve on a spoon for a cryo beet salad. ;-) Have fun!

Thanks! Sounds like a good idea to chop it up into smaller pieces and then crush it. Will be serving a Brillant Savarin, which is a soft cows cheese, with a pear- and cardemon jam with gingerbread molded as branches. Should look pretty awzummme
