A client of mine today was talking about how she came up with 8oz of freshly foraged BC truffles yesterday at noon and I sorta did the Scooby Doo "awooo?"
So here I am...she's delivering 2oz first thing tomorrow morning.
What do I do with them??
I'm thinking that my friend and I will split one oz and I'll vacuum seal and freeze the second oz.
I only came up with generic ideas like grated over soft scrambled eggs and maybe a risotto.
I've NEVER cooked with truffles. Ever. Especially not fresh ones.
I have poisoned a meal or two with truffle oil, though...
