Tenderloin, liquorice sauce, burnt onion, salsify mash and burnt brussel sprouts. Tender loin was preseared and cooked for 2 hours at 54c then fried in oil.

When you say burnt brussel sprouts, what do you mean? How were they prepared?

Peeled, blanched and charred with a blowtorch. I think it adds a nice and surprising taste to the freshness and crispiness of the brussel sprout.
