Looks amazing! How did you cook the zucchini scales? Did you cook them prior to putting them on the bass?

Pretty sure you put them on the bass and then sous vide it. The vacuum seal holds the scales to the fish.

They are blanched very lightly then placed onto the bass as Robert said
