Of course I stole it

I was googling modernist / fancy Tzatziki and saw this from a famous restaurant, they used spheres but I was too lazy and didn't have methocel at home so this is just Xhantan, I was really pleasantly surprised the color on it came out as it did. In other news it also would make a fantastic food truck item or salad dressing, wife that normally never eats it said - what is this, it is really tangy tasty!
