Animal style

I lived in LA for about a decade and graduated from USC. This weekend they played their bowl game. To celebrate the game and give a little taste of LA I made a my copy of an In N Out Double Double Animal Style. While I'm not a big fan of In N Out's fries, I get them animal style too, with chopped chilis. My riff on the fries is to do tater tots animal style, topped with a fried egg and sauteed jalapenos.

I keep hearing SoCalers talking trash about In-n-Out fries..... WT actual F????? Their fries are AMAZING!!! More or less cut to order, you can get them well done. I LOVE THEIR FRIES AND WILL CHALLENGE ALL DETRACTORS TO A ROCHAMBEAU TO DEFEND THEIR HONOR!!!!!

Been a couple of times, for some reason it was much more satisfying at 2am than it was at 6pm.

Johan, if an In and Out burger isn't more satisfying at 2am those people aren't living right. And Jason, i just finished my "medicine" and those photos are killing me....

The service is top notch, want done. Want poached and a lower temperature, then fried at and higher temperature, it doesn't happen. This isn't to say their fries are bad, but rather that other fries are better.

In N Out only does a single fry on the fries, that's the problem. They should at least double fry, if not go for the full triple cook plus freeze. Can be fine straight out of fryer, but turn limp and bland FAST. They seem to believe that freshness is key, so they peel and cut potatoes seconds before it goes into fryer. I don't know why freshness would be particularly important for fried potato products.

Ding ding ding! So true. In N Out has great service, they will leave them in the fryer longer if asked. I wonder if they would double-fry if asked really, really nicely.
