Hi, I am Ramy. I am looking for a Chilli Garlic sauce recipe which can be used as a dip as well as for basting chicken on the grill. Want to get the grainy rustic texture. I cannot make a roux as I need it to be gluten free. Grateful if anyone from the expert community can help.

I'd honestly look for a Mae Ploy rip off as a starting position.

Chili garlic is pretty simple, you want something "oily that has some emulsion, kinda like a vinaigrette", you then want bright and sweet, not so salty notes and you want to control the heat, right?
