It has been requested by all my guests that I make tuna tartar for NYE. I have no problem but , i want something a little different like a tuna tartar roulade that I can slice into discs for crackers. Activa RM or is there something better? Im thinking dusting and not slurry. The reason is I want the shallots, garlic, ginger, ponzu all thru the piece. Suggestions?
