Foam textures using different methods

How do the textures vary between foams made with gelatin/agar in a whipping siphon and say the same product mixed with methocel and whipped traditionally in a stand mixer? I'm trying to plan for my next dinner and I only have one siphon and i'm trying to avoid having to buy another one just for this dinner but I need to make a few different foams.

@Brendan — This is a really complicated question, but in general the bubbles will be finer out of a whipping siphon, but you'll occasionally get some irregular big bubbles in the foam that the stirring action of a stand mixer would even out.



But to your direct question, you can usually whip something well enough with a stand mixer if you only have one siphon. It will be a little bit less stable and may not attain the same volume.
